Caramellised Junami with raisins

Ingredients – Serves 4:2 Junami apples4 tbsp soft brown sugar1/2 cup softened raisinsKnob of butter1 teaspoon cinnamonDairy ice cream

Preparation method:
 Soak the raisins in warm water to soften. Wash but do not peel the Junami apples. Remove the core and cut the apple in small pieces. Melt the knob of butter in a non-stick frying pan. Melt the butter, but do not allow it to turn brown. Using a wooden spoon, stir the soft brown sugar into the melted butter. Continue to stir briskly. Add the cinnamon and the apple pieces and turn up the heat to high. Stir briskly, letting the sugar caramelise. Stir in the raisins and continue stirring briskly until a nice, thick dark syrup is formed and all the apple pieces are completely covered. Serve with a scoop of dairy ice cream.
